Easy Refreshing Watermelon Popsicles

We are now heading into one of the great joys of summer: watermelon season! On a hot day there’s nothing better than enjoying cool, juicy watermelon. So here’s a great recipe for an even yummier way to enjoy this delicious fruit. 

 

What You’ll Need:

  • 2 ½ cups deseeded watermelon
  • Popsicle molds (they are pretty inexpensive, so be on the lookout for fun shapes if you can).*
  • A blender

 

Optional Flavorings:

  • 1 tsp. vanilla extract
  • 2 tbsp. lime juice
  • 1 tbsp. rosewater (can be found at international grocery stores, online, or sometimes in the international section of your local supermarket).

 

Make It!

Blend your watermelon with any of the flavorings you choose (or try something different, such as berry or orange juice). You may also add a little liquid sweetener, such as agave nectar or honey, if you wish. Once the mixture is completely blended with no lumps, pour the mixture into Popsicle molds. Freeze your watermelon pops for three to four hours until solid.

To get them out of the molds, remove them from the freezer and let stand at room temperature for about five to seven minutes before trying to get them out.

 

Make Your Own!

You can make your own molds by using a 3 oz. paper or plastic  cup, small muffin tins, ice cube trays, or small empty yogurt containers (previously washed). But you will need popsicle sticks, straws, or toothpicks (depending on the size of your popsicle mold). Here’s the tricky part: you must let the liquid freeze just a little before inserting the stick, or the stick won’t stand up in the center. Be creative and have fun! Maybe you can experiment with other types of juices for even more fun!
